WE HAVE A THIRST FOR GOOD BEER & KNOWLEDGE
Actually the question is “why do QLDers put ice in it?” It’s a simple answer Susan, BECAUSE ITS HOT AS HELL UP HERE!
It’s a bit more than that actually. Sauv Blanc is a delicious grape variety that gives passionfruit, cut grass, tropical fruits and gooseberry. Also cats pee. All of those mouth watering and triggering profiles come from thiols. Thiols (another thirsty thursday) are a cool family of compounds that you find in fruits and hops and are liberated through fermentation.
Basically, when you smash grapes up (or malt and grain) and yeast gets involved, you kick off fermentation. While I am pretty sure there is a cucumber in the back of my fridge making itself into a damn fine vino as we speak, I much prefer to sit in front of the fan with a glass of Savvy B.
That cats pee profile (also seen as gooseberry or passionfruit) you get is strong in young Savvy’s because the fermentation is fresh and punchy. It’s not a bad thing. It’s just a thing. Some love the punchy, grippy tart acid and others find that ice cubes slightly dilute that, giving you more tropical fruit and cut grass.
One of our favourite things about Sauvs, is that the older or more “worked” (think oak, not a long night shift) the wine, the less of this profile you get and more of the rounded mouth feel, mature fruit and subtle flavours you enjoy.
If you pop into The Tasting Room at Milton, you too can sniff a glass and sample both a young Savvy B, a Fume Blanc (what they call an oaked Savvy B) or even an Amphora Sauv Blanc which has zero cats pee and all of the deliciousness you want in a fruity, dry white wine.
Sauvignon Blanc isn’t just for ya mum. It’s for all you wine snobs out there. Trust me.
